Along the Journey Weekly Roundup #8: Frugal Recipes Edition

Every Tuesday, I will post a link roundup of articles I’ve found while researching the Internet.  Today I went grocery shopping.  I did alright, but there is still room for improvement in my grocery shopping.  I did pick up the ingredients for a frugal black bean soup recipe at the recommendation of one of my coworkers.  It was pretty good, and there is plenty left over so I hope it freezes well!  On to the articles!

Here you go Forest!

This is a copy / paste as I got it. I didn’t follow the recipe to the letter. I actually added corn. I wish my meat was a bit more tender so take that into consideration if you try it. Other than that I am very happy with the results

Ingredients
2 lb lean roast – cut into half inch cubes or smaller.
2 cloves garlic
2 packets fajita seasoning mix
5 cans of black beans (soup can size) or 2 – 3 large cans
(just depends on how long you want it to last)
Fresh cilantro
2 cans Rotel (I use mild and it is spicy enough for flavor. It is not hot)
1-2 cans diced tomatos (to your liking) drained
• I typically do two rotel and one diced – mix it up as you like.

1. In a large pot (at least 5 quart) start cooking the beans, 1 can of rotel, and some fresh cilantro to your desire.
2. In large skillet, cook roast cubes, two pressed/crushed cloves garlic, Juice from the other can of rotel, some more cilantro, and both fajita seasoning packets. Cook until the juice is mostly evaporated and the roast meat is cooked through.
3. Add the remnants of the drained Rotel can to the bean pot while cooking the meat.
4. When the meat is ready, add it to the pot and cover. Simmer the stew for about 90 minutes to really get the flavors mingled.

Optional: Diced onions( white, red or green) or hot peppers cooked with the meat or as a garnish. Sour Cream and Mozzarella/Monterrey Jack as toppings. Maybe some corn chips as well.
